Cake Preparation
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk.
- Stir in the lemon zest and vanilla extract.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Raspberry Filling
- In a saucepan, combine the raspberries, sugar, lemon juice, and cornstarch.
- Cook over medium heat until the mixture thickens and bubbles, about 5-7 minutes.
- Remove from heat and let cool before using.
Frosting and Assembly
- In a mixing bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, lemon juice, lemon zest, and vanilla extract, beating until smooth and fluffy.
- Place one cake layer on a serving plate and spread the raspberry filling on top.
- Top with the second cake layer and frost the top and sides with the lemon frosting.
- Decorate with additional raspberries and lemon zest if desired.
Notes
For best results, use fresh raspberries and allow the cake to chill in the refrigerator for an hour before serving.
