Method
Prepare the Filling
- Preheat the oven to 350°F (175°C). In a skillet, brown the ground beef over medium heat. Add chopped onion and cook until softened.
- Stir in black beans, corn, cumin, chili powder, and salt. Cook for an additional 5 minutes, then remove from heat.
Assemble the Casserole
- Spread a thin layer of enchilada sauce on the bottom of the baking dish.
- Layer 4 tortillas over the sauce, followed by half of the meat mixture, half of the cheese, and a bit more sauce. Repeat the layers, finishing with tortillas, sauce, and remaining cheese on top.
Bake
- Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving. Top with sour cream if desired.
Notes
This casserole can be made ahead of time and stored in the refrigerator before baking. Just add an extra 10 minutes to the baking time if baking from cold.
