Method
Prepare the Filling
- In a skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is translucent.
- Drain excess fat, then stir in black beans, corn, enchilada sauce, cumin, and chili powder. Simmer for 5 minutes.
Assemble the Casserole
- Preheat the oven to 350°F (175°C).
- In a 9x13 inch baking dish, spread a layer of the filling, followed by a layer of tortilla quarters, then a layer of cheese. Repeat layers until all ingredients are used, finishing with cheese on top.
Bake
- Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
- Let cool for a few minutes before serving. Garnish with sour cream and green onions.
Notes
This casserole can be made ahead of time and stored in the refrigerator before baking. Just add an extra 10 minutes to the baking time if baking from cold.
