Ingredients
  

For the Salmon
  • 4 fillets salmon skin-on or skinless
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoons olive oil
For the Peaches
  • 2 medium peaches halved and pitted
  • 1 tablespoon brown sugar
  • 1 tablespoon butter melted
For the Honey Balsamic Glaze
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced

Method
 

Prepare the Glaze
  1. In a bowl, whisk together balsamic vinegar, honey, Dijon mustard, and minced garlic until well combined.
Prepare the Salmon
  1. Preheat the grill to medium-high heat. Season the salmon fillets with salt and black pepper, and drizzle with olive oil.
Grill the Peaches
  1. In a small bowl, mix the halved peaches with melted butter and brown sugar. Place them cut-side down on the grill and cook for about 4-5 minutes until grill marks appear.
Grill the Salmon
  1. Place the seasoned salmon fillets on the grill. Cook for about 6-8 minutes per side, or until the salmon is cooked through and flakes easily with a fork.
Combine and Serve
  1. Remove the salmon and peaches from the grill. Drizzle the honey balsamic glaze over the salmon and top with grilled peaches. Serve immediately.
