Ingredients
  

For the Chicken Marinade
  • 1 lb Boneless, skinless chicken thighs
  • 2 tbsp Olive oil
  • 2 tbsp Lime juice
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1 tsp Garlic powder
  • to taste Salt and pepper
For the Tacos
  • 8 pieces Corn tortillas
  • 1 cup Fresh cilantro
  • 1 cup Diced onions
  • 1 cup Sliced radishes
For the Salsa (optional)
  • 2 pieces Tomatoes
  • 1 piece Jalapeño pepper
  • 1 small Red onion
  • 1 tbsp Lime juice (additional)

Method
 

Marinating and Grilling
  1. Marinate your chicken thighs in a mixture of lime juice, garlic, and spices. Let it soak for at least 30 minutes to infuse those vibrant flavors.
  2. Preheat your grill to medium-high heat, around 400°F.
  3. Grill the marinated chicken for about 6-7 minutes on each side until golden brown and the internal temperature reaches 165°F.
  4. Rest the grilled chicken for 5 minutes before slicing to allow the juices to redistribute.
  5. Slice the chicken into thin strips for easy filling.
  6. Warm your corn tortillas on the grill for about 30 seconds per side until soft and pliable.
  7. Assemble the tacos by layering sliced chicken, fresh cilantro, diced onions, and a squeeze of lime juice on each tortilla.
