Ingredients
  

For the Salmon
  • 4 fillets salmon skin-on or skinless
  • 1 teaspoon olive oil for brushing
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
For the Grilled Peaches
  • 2 medium peaches halved and pitted
  • 1 tablespoon honey for drizzling
For the Honey Balsamic Glaze
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 1 tablespoon Dijon mustard
  • 1 clove garlic minced

Method
 

Prepare the Honey Balsamic Glaze
  1. In a small saucepan, combine balsamic vinegar, honey, Dijon mustard, and minced garlic. Bring to a simmer over medium heat and cook until slightly thickened, about 5-7 minutes. Remove from heat and set aside.
Grill the Peaches
  1. Preheat the grill to medium-high heat. Brush the peach halves with honey and place them cut-side down on the grill. Grill for about 3-4 minutes until grill marks appear and they are slightly softened. Remove from grill and set aside.
Grill the Salmon
  1. Brush the salmon fillets with olive oil and season with salt and pepper. Place the salmon on the grill, skin-side down. Grill for about 4-5 minutes on each side, or until cooked through and flakes easily with a fork.
Serve
  1. Plate the grilled salmon, top with grilled peaches, and drizzle with the honey balsamic glaze. Serve immediately.

Notes

For added flavor, marinate the salmon in olive oil, lemon juice, and herbs for 30 minutes before grilling.
