Ingredients
  

Corn
  • 8 ears sweet corn husked
Sauce
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1 clove garlic minced
Toppings
  • 1 cup cotija cheese crumbled
  • 1/4 cup cilantro chopped
  • 1 teaspoon smoked paprika
  • 1 lime lime wedges for serving

Method
 

Prepare the Corn
  1. Preheat the grill to medium-high heat. Husk the corn and remove all silk strands.
Grill the Corn
  1. Place the corn directly on the grill grates. Grill for about 10-15 minutes, turning occasionally, until the corn is charred and cooked through.
Make the Sauce
  1. In a large bowl, mix together mayonnaise, sour cream, lime juice, chili powder, and minced garlic until well combined.
Assemble the Dish
  1. Once the corn is grilled, remove it from the grill and brush each ear generously with the sauce mixture.
  2. Sprinkle with crumbled cotija cheese, chopped cilantro, and smoked paprika. Serve with lime wedges.

Notes

For extra flavor, you can add hot sauce to the sauce mixture or sprinkle some chili flakes on top before serving.
