Preparation
- Chop your vegetables and beef into bite-sized pieces.
Cooking
- In a large pot, heat some oil over medium-high heat. Add the beef in batches, browning it until golden brown, about 5-7 minutes per batch.
- Remove the beef and add onions and carrots to the pot, sautéing for about 5 minutes until softened.
- Stir in minced garlic and thyme, cooking for an additional minute until aromatic.
- Pour in a can of Guinness beer, scraping up any browned bits from the bottom of the pot. Let it simmer for about 3-4 minutes.
- Return the browned beef to the pot along with potatoes and broth. Bring to a gentle boil, then reduce heat to low.
- Cover and let the stew simmer for 1.5 to 2 hours, stirring occasionally until the beef is tender.
- Taste and adjust seasoning with salt and pepper before serving hot.
- Garnish with fresh parsley for a pop of color.
