Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken thighs can substitute with chicken breast
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 tablespoon olive oil
Jalapeño Pineapple Salsa
  • 1 cup fresh pineapple, diced
  • 1 medium jalapeño, seeded and minced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime juiced
  • 1/4 teaspoon salt
Taco Assembly
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 avocado sliced

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine soy sauce, honey, garlic powder, ground ginger, and olive oil. Add chicken thighs and marinate for at least 15 minutes.
  2. Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from grill and let rest for a few minutes.
Make the Salsa
  1. In a separate bowl, combine diced pineapple, minced jalapeño, red onion, cilantro, lime juice, and salt. Mix well and set aside.
Assemble the Tacos
  1. Slice the grilled chicken into strips. Warm the corn tortillas on the grill for about 30 seconds on each side.
  2. To assemble, place shredded lettuce on each tortilla, top with sliced chicken, jalapeño pineapple salsa, and avocado slices. Serve immediately.

Notes

For extra flavor, consider adding a drizzle of sriracha or a sprinkle of sesame seeds on top before serving.
