Ingredients
  

Beans
  • 2 cups pinto beans cooked and drained
  • 1 cup vegetable broth or water
  • 1 tablespoon olive oil for cooking
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper adjust to taste

Method
 

Cooking the Beans
  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the cooked pinto beans, vegetable broth, cumin, salt, and black pepper. Cook for about 10 minutes, stirring occasionally.
Mashing the Beans
  1. Using a masher, mash the beans to your desired consistency, adding more broth if necessary to achieve a creamier texture.
  2. Cook for an additional 5 minutes, stirring frequently, until heated through.

Notes

These refried beans can be stored in the refrigerator for up to a week and can be frozen for longer storage.
