Prepare Sticky Rice
- Rinse the soaked glutinous rice under cold water until the water runs clear. Drain well.
- In a medium saucepan, combine the rinsed rice with 1 1/2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender and water is absorbed.
- In a separate bowl, mix the coconut milk, sugar, and salt. Once the rice is cooked, stir in the coconut mixture and let it sit covered for 10 minutes.
Prepare Mango Topping
- While the rice is resting, peel and slice the mangoes. Toss the slices with lime juice and zest.
Make Coconut Sauce
- In a small saucepan, combine coconut milk, sugar, and salt. Heat gently until the sugar dissolves, but do not boil.
Serve
- To serve, place a portion of sticky rice on a plate, top with mango slices, and drizzle with coconut sauce.
Notes
This dessert can be served warm or at room temperature. Adjust the sweetness of the coconut sauce according to your preference.
