Ingredients
  

Chicken Marinade
  • 1 lb boneless chicken thighs skinless
  • 2 tbsp soy sauce
  • 1 tbsp gochujang Korean chili paste
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 2 cloves garlic minced
  • 1 inch ginger grated
Taco Assembly
  • 8 small corn tortillas
  • 1 cup cabbage shredded
  • 1 cup carrots shredded
  • 1 cup cucumber sliced
  • 1/4 cup cilantro chopped
  • 1/4 cup green onions sliced
  • 1/4 cup sriracha for drizzling

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine soy sauce, gochujang, sesame oil, honey, minced garlic, and grated ginger. Add the chicken thighs and marinate for at least 15 minutes.
Cook the Chicken
  1. Preheat the grill to medium-high heat. Remove chicken from marinade and grill for about 6-7 minutes on each side, or until fully cooked. Let it rest for a few minutes before slicing.
Assemble the Tacos
  1. Warm the corn tortillas on the grill for about 30 seconds on each side. Slice the grilled chicken and place it on the tortillas. Top with shredded cabbage, carrots, cucumber, cilantro, and green onions. Drizzle with sriracha.
