  • 1 cup Lettuce romaine or iceberg
  • 1 cup Diced tomatoes cherry tomatoes are a great alternative
  • 1/2 cup Sour cream or Greek yogurt for topping
For the Quesadillas
  • 2 cups Leftover taco meat excellent filling choice
  • 4 pieces Tortillas flour or corn
  • 1 cup Cheese blend mix of mozzarella and cheddar
  • 1 cup Bell peppers and onions sautéed for flavor
For the Burrito Bowls
  • 2 cups Leftover taco meat the star of the bowl
  • 1 cup Rice or quinoa brown rice adds extra fiber
  • 1 cup Black beans or pinto beans boosts protein
  • 1 cup Corn kernels canned, frozen, or fresh
  • 1 avocado Avocado slices or guacamole for creamy texture

Method
 

Preparation
  1. Heat the leftover taco meat in a skillet over medium heat. Stir occasionally until warmed through, about 5-7 minutes.
  2. Prepare any additional ingredients you’d like to add, such as diced tomatoes, onions, or cheese.
  3. Combine the warmed meat with your chosen extras in a bowl. Mix gently until everything is well incorporated.
  4. Spoon the mixture into taco shells or tortillas of your choice.
  5. Top with your favorite garnishes like lettuce, sour cream, salsa, or avocado.

Notes
