Method
Prepare the Crust
- Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the flour and salt, mixing until just combined. Press the mixture into the bottom of a greased 9x9 inch baking pan.
- Bake for 15 minutes or until lightly golden. Remove from the oven and set aside.
Prepare the Filling
- In a separate bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, flour, and baking powder until smooth.
- Pour the filling over the baked crust and return to the oven.
- Bake for an additional 20 minutes or until the filling is set and slightly golden on top.
Finish and Serve
- Allow the lemon bars to cool completely in the pan. Dust with powdered sugar before cutting into squares.
- Serve chilled or at room temperature. Enjoy!

For best results, use fresh lemons for juice and zest. These lemon bars can be stored in the refrigerator for up to a week.
