Ingredients
  

Crust
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
Filling
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice about 2 lemons
  • 1 tablespoon lemon zest freshly grated
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
Topping
  • 1 cup powdered sugar for dusting

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the flour and salt, mixing until just combined. Press the mixture into the bottom of a greased 9x9 inch baking pan.
  3. Bake for 15 minutes or until lightly golden. Remove from the oven and set aside.
Prepare the Filling
  1. In a separate bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, flour, and baking powder until smooth.
  2. Pour the filling over the baked crust and return to the oven.
  3. Bake for an additional 20 minutes or until the filling is set and slightly golden on top.
Finish and Serve
  1. Allow the lemon bars to cool completely in the pan. Dust with powdered sugar before cutting into squares.
  2. Serve chilled or at room temperature. Enjoy!

Notes

For best results, use fresh lemons for juice and zest. These lemon bars can be stored in the refrigerator for up to a week.
