  • 2 pieces Boneless, skinless chicken breasts
  • 3 cloves Fresh garlic minced
  • 2 tablespoons Extra virgin olive oil
  • 2 tablespoons Fresh lemon juice fresh-squeezed
For the Pasta
  • 8 ounces Pasta of choice spaghetti or fettuccine
  • 1 teaspoon Salt for pasta water
For the Sauce
  • 1 cup Low-sodium chicken broth
  • 1/2 cup Freshly grated Parmesan cheese
  • 1/4 cup Fresh parsley chopped

Method
 

Cooking the Pasta
  1. Boil a large pot of salted water. Add your favorite pasta and cook according to package instructions until al dente, usually around 8-10 minutes.
Sautéing the Chicken
  1. Heat a drizzle of olive oil in a large skillet over medium-high heat. Add bite-sized pieces of chicken breast and sauté until golden brown and cooked through, about 6-7 minutes.
Adding Garlic
  1. Toss in minced garlic and let it sauté for an additional minute, stirring frequently until fragrant.
Incorporating the Sauce
  1. Squeeze fresh lemon juice into the skillet, then add a splash of chicken broth and zest for extra flavor. Stir well to combine, letting it simmer for 2-3 minutes until slightly reduced.
Combining Everything
  1. Drain the cooked pasta and add it directly to the skillet with the chicken and sauce. Toss everything together, ensuring each strand is coated beautifully with the sauce.
