Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
Wet Ingredients
  • 0.5 cups unsalted butter softened
  • 1 cups granulated sugar
  • 2 large eggs
  • 0.5 cups buttermilk
  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp lemon zest fresh

Method
 

Prepare the Batter
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the buttermilk, lemon juice, and lemon zest until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cake
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra lemony flavor, drizzle a lemon glaze over the cooled cake.
