Ingredients
  

Vegetables
  • 2 cups broad beans fresh or frozen, shelled
  • 1 cup peas fresh or frozen
  • 1 cup fresh mint leaves chopped
Dressing
  • 3 tablespoons olive oil extra virgin
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • 1 teaspoon honey optional

Method
 

Prepare the Vegetables
  1. Bring a pot of salted water to a boil. Add the broad beans and cook for 3-4 minutes until tender. Add the peas and cook for an additional 2 minutes.
  2. Drain the beans and peas in a colander and rinse under cold water to stop the cooking process.
Make the Dressing
  1. In a mixing bowl, whisk together the olive oil, lemon juice, lemon zest, honey, salt, and pepper until well combined.
Combine and Serve
  1. In a large bowl, combine the drained broad beans, peas, and chopped mint. Pour the dressing over the top and toss gently to combine.
  2. Serve immediately or chill in the refrigerator for 30 minutes for enhanced flavors.

Notes

This dish can be served warm or cold and pairs well with grilled meats or as part of a picnic spread.
