Ingredients
  

Pasta
  • 2 cups elbow macaroni uncooked
Vegetables
  • 1 cup celery diced
  • 1 cup red bell pepper diced
  • 1/2 cup red onion diced
  • 1/2 cup sweet pickle relish
Dressing
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Optional
  • 1/2 cup hard-boiled eggs chopped
  • 1/4 cup green onions sliced

Method
 

Prepare the Pasta
  1. Cook the elbow macaroni according to package instructions. Drain and rinse under cold water to cool.
Mix Ingredients
  1. In a large bowl, combine the cooled macaroni, celery, red bell pepper, red onion, and sweet pickle relish.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, salt, and black pepper.
Combine
  1. Pour the dressing over the macaroni mixture and stir until well combined. If using, fold in the chopped hard-boiled eggs and green onions.
Chill and Serve
  1. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

This salad can be made a day in advance for better flavor. Adjust seasoning to taste.
