Mango Sticky Rice Coconutty

A delightful Thai dessert made with sweet sticky rice, fresh mango, and creamy coconut sauce.

Ingredients
  

Sticky Rice
  • 1 cup glutinous rice soaked in water for at least 4 hours or overnight
Coconut Sauce
  • 1 cup coconut milk preferably unsweetened
  • 1/4 cup sugar adjust to taste
  • 1/4 teaspoon salt
Mango
  • 2 ripe mangoes peeled and sliced
Toppings
  • 1 tablespoon sesame seeds toasted
  • 1 tablespoon coconut flakes toasted

Method
 

Prepare Sticky Rice
  1. Drain the soaked glutinous rice and place it in a steamer lined with cheesecloth. Steam for about 20-25 minutes until tender.
Make Coconut Sauce
  1. In a saucepan, combine coconut milk, sugar, and salt. Heat over medium heat until sugar dissolves, but do not boil.
Combine Rice and Sauce
  1. Once the sticky rice is cooked, transfer it to a mixing bowl and pour half of the coconut sauce over it. Mix well and let it sit for about 10 minutes.
Serve
  1. To serve, place a portion of the sticky rice on a plate, top with sliced mango, and drizzle with the remaining coconut sauce. Sprinkle with toasted sesame seeds and coconut flakes.

Notes

For best results, use ripe mangoes that are sweet and fragrant. Adjust the sweetness of the coconut sauce according to your preference.
