  • 1 cup Cucumber refreshing and crunchy
  • 1 medium Red Onion thinly sliced
  • 1/2 cup Kalamata Olives briny and bold
  • 1/2 cup Feta Cheese crumbly and tangy
For the Dressing
  • 1/4 cup Extra Virgin Olive Oil rich and fruity
  • 2 tablespoons Lemon Juice fresh is best
  • 1 teaspoon Dried Oregano aromatic and earthy

Method
 

Preparation
  1. Gather fresh vegetables, grains, and herbs essential for your Mediterranean side dishes.
  2. Dice your veggies into bite-sized pieces and combine them in a large bowl with olive oil, lemon juice, salt, and pepper.
  3. Heat a pan over medium-high heat and add your seasoned veggies. Sauté for about 5-7 minutes until they are tender yet still crisp.
  4. In another pot, bring water to a boil and add quinoa or couscous. Cook according to package instructions, usually around 15 minutes for quinoa until fluffy.
  5. Once the grains are ready, fluff them up with a fork and stir in the sautéed vegetables.
  6. Transfer your dish to a serving bowl and sprinkle with crumbled feta cheese or olives.
