Ingredients
  

Pie Crust
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter cold and cubed
  • 6 tablespoons ice water more if needed
Filling
  • 2 cups rhubarb chopped
  • 2 cups strawberries sliced
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon butter to dot on top of filling

Method
 

Prepare the Pie Crust
  1. In a mixing bowl, combine flour and salt. Add cold butter and mix until the mixture resembles coarse crumbs.
  2. Stir in ice water, a tablespoon at a time, until the dough comes together. Divide into two discs, wrap in plastic, and refrigerate for at least 1 hour.
Make the Filling
  1. In a large bowl, combine chopped rhubarb, sliced strawberries, sugar, cornstarch, lemon juice, and vanilla extract. Mix well and set aside to macerate for 15 minutes.
Assemble the Pie
  1. Preheat the oven to 425°F (220°C). Roll out one disc of dough on a floured surface to fit the pie dish. Place it in the dish and fill with the rhubarb-strawberry mixture. Dot with butter.
  2. Roll out the second disc and cut into strips to create a lattice top. Weave the strips over the filling and seal the edges.
Bake the Pie
  1. Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  2. Let the pie cool for at least 2 hours before slicing to allow the filling to set.

Notes

Serve with whipped cream or vanilla ice cream for an extra treat.
