Ingredients
  

Corn Fritters
  • 2 cups Fresh Corn Kernels Can use canned or frozen if fresh is unavailable
  • 1 cup All-Purpose Flour
  • 1 large Egg
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Green Onions Chopped
  • 1/4 cup Milk
  • 2 cups Vegetable Oil For frying
Sandwich Assembly
  • 4 slices Bread Any type, toasted
  • 4 slices Cheddar Cheese Optional
  • 1 cup Lettuce Shredded
  • 1/2 cup Tomato Sliced
  • 1/4 cup Mayonnaise Optional

Method
 

Prepare the Corn Fritters
  1. In a mixing bowl, combine corn kernels, flour, egg, baking powder, salt, black pepper, green onions, and milk. Mix until well combined.
  2. Heat vegetable oil in a frying pan over medium heat.
  3. Scoop about 1/4 cup of the corn mixture and drop it into the hot oil. Flatten slightly with a spatula.
  4. Fry for 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.
Assemble the Sandwich
  1. Toast the bread slices until golden.
  2. Place a corn fritter on a slice of bread, top with cheese, lettuce, and tomato.
  3. Spread mayonnaise on another slice of bread and place it on top to complete the sandwich.
  4. Serve immediately and enjoy!
