National Hamburger Day Strawberry BBQ Sauce Pulled Pork

Ingredients
  

Pulled Pork
  • 2 pounds pork shoulder trimmed and cut into chunks
  • 1 tablespoon olive oil for searing
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup chicken broth
Strawberry BBQ Sauce
  • 1 cup fresh strawberries hulled and chopped
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon black pepper
To Serve
  • 4 buns hamburger buns toasted
  • 1 cup coleslaw optional

Method
 

Prepare the Pulled Pork
  1. Heat olive oil in a skillet over medium-high heat. Season the pork shoulder with salt and black pepper, then sear on all sides until browned.
  2. Transfer the seared pork to a slow cooker and add chicken broth. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.
Make the Strawberry BBQ Sauce
  1. In a blender, combine fresh strawberries, ketchup, brown sugar, apple cider vinegar, smoked paprika, garlic powder, onion powder, Worcestershire sauce, and black pepper. Blend until smooth.
  2. Pour the sauce into a saucepan and simmer over medium heat for 10-15 minutes until thickened.
Combine and Serve
  1. Once the pork is cooked, shred it using a meat fork and mix in the strawberry BBQ sauce.
  2. Serve the pulled pork on toasted hamburger buns, topped with coleslaw if desired.

Notes

This pulled pork can be made a day in advance and reheated before serving. The strawberry BBQ sauce adds a unique twist to the traditional flavor.
