Ingredients
  

Zucchini Patties
  • 2 cups zucchini, grated excess moisture squeezed out
  • 1 cup bread crumbs for binding
  • 1 large egg beaten
  • 1 cup cheddar cheese, shredded or cheese of choice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For Assembly
  • 8 slices bread your choice, such as rye or whole wheat
  • 4 slices cheddar cheese for melting
  • 2 tablespoons butter for grilling

Method
 

Prepare Zucchini Patties
  1. In a mixing bowl, combine grated zucchini, bread crumbs, beaten egg, cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  2. Form the mixture into 4 patties.
Cook Patties
  1. Heat a skillet over medium heat and add a little oil. Cook the patties for about 4-5 minutes on each side until golden brown and cooked through.
Assemble Patty Melts
  1. Butter one side of each slice of bread. Place one slice butter-side down in the skillet, add a patty, a slice of cheese, and top with another slice of bread, butter-side up.
  2. Grill until golden brown on both sides and cheese is melted, about 3-4 minutes per side.
