Method
Prepare Hibiscus Tea
- In a saucepan, bring 4 cups of water to a boil. Remove from heat and add the dried hibiscus flowers. Steep for 10 minutes.
- Strain the hibiscus tea into a pitcher, discarding the flowers. Stir in 1 cup of sugar until dissolved. Let cool.
Make Rhubarb Syrup
- In another saucepan, combine 2 cups of chopped rhubarb, 1 cup of water, and 1 cup of sugar. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Strain the syrup into a container, discarding the solids. Let cool.
Combine and Serve
- In a glass, combine 1 part hibiscus tea with 1 part rhubarb syrup. Adjust sweetness if desired.
- Add ice cubes and garnish with fresh mint leaves before serving.
Notes
For a more intense flavor, let the hibiscus tea steep longer. Adjust the sweetness of the rhubarb syrup to your preference.
