No Bake Strawberry Icebox Cake

Ingredients
  

Cake Layers
  • 2 cups fresh strawberries sliced
  • 1 cup heavy whipping cream chilled
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package graham crackers about 14 full sheets

Method
 

Prepare the Whipped Cream
  1. In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric mixer until soft peaks form.
Assemble the Cake
  1. Spread a layer of whipped cream on the bottom of the loaf pan.
  2. Place a layer of graham crackers over the whipped cream.
  3. Add a layer of sliced strawberries over the graham crackers.
  4. Repeat the layers (whipped cream, graham crackers, strawberries) until all ingredients are used, finishing with whipped cream on top.
Chill the Cake
  1. Cover the loaf pan with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the cake to set.
Serve
  1. Once set, remove from the refrigerator, slice, and serve chilled. Enjoy!

Notes

For best results, use fresh strawberries and chill the cake overnight for optimal flavor and texture.
