Ingredients
  

For the Pasta
  • 1 lb Pasta of choice like penne or spaghetti
  • 1 tbsp Salt for pasta water
For the Vegetables
  • 1 cup Bell peppers mix of red, yellow, and green
  • 1 medium Zucchini sliced thinly
  • 1 cup Carrots julienne or sliced thin
  • 1 cup Cherry tomatoes roasted
  • 2 cups Spinach or kale added at the end
For the Sauce
  • 3 tbsp Olive oil extra virgin for best flavor
  • 2 cloves Garlic minced
  • 1/2 cup Parmesan cheese freshly grated

Method
 

Cooking Instructions
  1. Fill a large pot with salted water and bring it to a rolling boil.
  2. Add your favorite pasta and cook until al dente, usually about 8-10 minutes.
  3. In a separate skillet, heat olive oil over medium heat and sauté bell peppers, zucchini, and cherry tomatoes for about 5-7 minutes.
  4. Drain the pasta, reserving a bit of the cooking water, and add it to the skillet with sautéed vegetables.
  5. Drizzle with fresh lemon juice, sprinkle with salt and pepper, and toss in grated Parmesan cheese before serving warm.
