Ingredients
  

For the Pasta
  • 8 oz Pasta Spaghetti or penne recommended.
For the Vegetables
  • 1 cup Bell Peppers Mix of red, yellow, and green.
  • 1 cup Zucchini Chopped.
  • 1 cup Carrots Thinly sliced.
  • 1 cup Cherry Tomatoes Halved.
  • 1 cup Broccoli Florets Steamed lightly.
For the Sauce
  • 2 tbsp Olive Oil
  • 2 cloves Garlic Minced.
  • 1/2 cup Parmesan Cheese Grated.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil.
  2. Add your favorite pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  3. While the pasta cooks, chop a colorful assortment of fresh vegetables into bite-sized pieces.
  4. In a separate skillet, heat olive oil over medium heat. Add the chopped vegetables and sauté for about 5-7 minutes until tender.
  5. Drain the cooked pasta and add it directly to the skillet with the sautéed vegetables. Toss everything together gently over low heat for 1-2 minutes.
  6. Sprinkle in salt, pepper, and freshly grated Parmesan cheese while tossing the mixture to taste.
  7. Optional: Garnish with fresh basil or parsley for an aromatic finish.
