Prepare Cookies
- Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the egg and mix well. In a separate bowl, combine the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Scoop tablespoon-sized portions of dough onto a baking sheet and flatten slightly. Bake for 10-12 minutes.
- Allow cookies to cool completely on a wire rack.
Assemble Sandwiches
- Once cookies are cool, take one cookie and place a scoop of vanilla ice cream on top.
- Add a scoop of strawberry ice cream and then a scoop of blueberry ice cream on top of the vanilla.
- Top with another cookie and gently press down to form a sandwich.
- Repeat with remaining cookies and ice cream. Place sandwiches in the freezer for at least 30 minutes to firm up.
