Ingredients
  

Filling
  • 4 cups fresh peaches, sliced or canned peaches, drained
  • 1 cup granulated sugar adjust based on sweetness of peaches
  • 1 tablespoon lemon juice freshly squeezed
  • 2 tablespoons cornstarch for thickening
  • 1 teaspoon ground cinnamon optional
Topping
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine sliced peaches, sugar, lemon juice, cornstarch, and cinnamon. Toss until peaches are well coated.
Prepare the Topping
  1. In another bowl, whisk together flour, sugar, baking powder, and salt. Stir in milk and melted butter until just combined.
Assemble and Bake
  1. Pour the peach mixture into a greased baking dish. Spoon the topping mixture over the peaches evenly.
  2. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and a toothpick inserted comes out clean.
Serve
  1. Let cool slightly before serving. Enjoy warm, optionally with vanilla ice cream.

Notes

For a twist, try adding a pinch of nutmeg or using a mix of different fruits.
