Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/4 cup sour cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
Peach Topping
  • 2 cups fresh peaches diced
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom of a muffin tin to form the crust.
Make the Cheesecake Filling
  1. In a mixing bowl, beat the softened cream cheese until smooth. Add sour cream, granulated sugar, vanilla extract, and egg. Mix until fully combined and creamy.
  2. Spoon the cheesecake filling over the crust in the muffin tin, filling each cup about 2/3 full.
Prepare the Peach Topping
  1. In a separate bowl, combine diced peaches, brown sugar, cinnamon, and lemon juice. Mix gently to coat the peaches.
  2. Spoon the peach mixture on top of the cheesecake filling in each muffin cup.
Bake and Cool
  1. Bake in the preheated oven for 20 minutes or until the cheesecake is set. Remove from the oven and let cool.
  2. Once cooled, refrigerate for at least 2 hours before serving.

Notes

These cheesecake bites can be made a day in advance and stored in the refrigerator until ready to serve.
