Cookie Cups
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Peach Filling
  • 2 cups fresh peaches peeled and diced
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon cinnamon
  • 1 tablespoon lemon juice
Streusel Topping
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter cold and cubed
  • 1/2 teaspoon cinnamon

Method
 

Prepare Cookie Cups
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Scoop the cookie dough into the muffin tin, pressing it down to form cups.
Prepare Peach Filling
  1. In a bowl, combine the diced peaches, brown sugar, cornstarch, cinnamon, and lemon juice. Mix well.
  2. Spoon the peach mixture into each cookie cup.
Prepare Streusel Topping
  1. In a bowl, mix together the flour, brown sugar, cubed butter, and cinnamon until crumbly.
  2. Sprinkle the streusel topping over the peach filling in each cookie cup.
Bake
  1. Bake in the preheated oven for 20 minutes, or until the cookie cups are golden brown.
  2. Allow to cool slightly before removing from the muffin tin.
  3. Serve warm or at room temperature.

Notes

These cookie cups can be served with a scoop of vanilla ice cream for an extra treat.
