Ingredients
  

Filling
  • 4 cups fresh peaches sliced and pitted
  • 1 tablespoon lemon juice to prevent browning
  • 1/4 cup granulated sugar adjust based on sweetness of peaches
  • 1 tablespoon cornstarch for thickening
Topping
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon cinnamon

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine sliced peaches, lemon juice, granulated sugar, and cornstarch. Toss to coat the peaches evenly.
Prepare the Topping
  1. In another bowl, mix together oats, flour, brown sugar, melted butter, and cinnamon until crumbly.
Assemble and Bake
  1. Spread the peach mixture in a baking dish and evenly sprinkle the oat topping over the peaches. Bake for 30 minutes or until the topping is golden brown and the peaches are bubbly.
Serve
  1. Let cool for a few minutes before serving. Enjoy warm, optionally with vanilla ice cream.

Notes

For added flavor, consider adding a pinch of nutmeg or vanilla extract to the peach filling.
