Ingredients
  

For the Marinade
  • 1 cup fresh peaches, pureed about 2-3 peaches
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon lime juice
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon salt
For the Skewers
  • 1 pound shrimp, peeled and deveined large shrimp
  • 2 peaches fresh, cut into wedges
  • 1 bell pepper cut into chunks any color
  • 1 tablespoon olive oil
  • to taste black pepper

Method
 

Prepare the Marinade
  1. In a bowl, combine peach puree, honey, soy sauce, lime juice, minced garlic, grated ginger, and salt. Mix well.
Marinate the Shrimp
  1. Add the shrimp to the marinade and let it sit for at least 15 minutes.
Assemble the Skewers
  1. Thread the marinated shrimp, peach wedges, and bell pepper chunks onto skewers.
Grill the Skewers
  1. Preheat the grill to medium-high heat. Brush the skewers with olive oil and season with black pepper.
  2. Grill the skewers for about 2-3 minutes on each side, or until the shrimp are opaque and cooked through.
Serve
  1. Remove from the grill and serve immediately, garnished with fresh herbs if desired.

Notes

For best results, soak wooden skewers in water for 30 minutes before grilling to prevent burning.
