Ingredients
  

Fresh Ingredients
  • 2 cups fresh pineapple, diced Use ripe pineapple for best flavor.
  • 1 cup red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped Optional, adjust to taste.
  • 1 medium jalapeño, seeded and minced Adjust for spice preference.
  • 2 tablespoons lime juice Freshly squeezed for best taste.
Seasoning
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Freshly ground preferred.

Method
 

Prepare the Ingredients
  1. Dice the fresh pineapple, red bell pepper, and red onion. Mince the jalapeño and chop the cilantro.
Mix the Salsa
  1. In a mixing bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño, and cilantro.
  2. Add lime juice, salt, and black pepper. Stir gently to combine all ingredients.
Serve
  1. Let the salsa sit for at least 10 minutes to allow flavors to meld. Serve with grilled meats or tortilla chips.

Notes

This salsa is best served fresh but can be stored in the refrigerator for up to 2 days. Stir before serving if stored.
