  • 1 can Pineapple rings Fresh or canned
  • 10 pieces Maraschino cherries For decoration
  • 1/2 cup Brown sugar For caramel flavor
  • 1/4 cup Unsalted butter Melted for topping
For the Batter
  • 1 1/2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 2 large Eggs
  • 1/2 cup Milk Whole or almond milk
  • 1 teaspoon Vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare the pan by greasing a 9-inch round baking dish. Sprinkle brown sugar evenly on the bottom, then arrange pineapple slices and cherries in a lovely pattern.
Mixing
  1. Mix the dry ingredients in a bowl: flour, baking powder, and salt. Whisk them together until well combined.
  2. Cream together butter and sugar in a separate bowl until light and fluffy, about 3-5 minutes.
  3. Add eggs one at a time, mixing well after each addition.
  4. Combine the dry ingredients with the butter mixture gradually, alternating with milk. Stir gently until just mixed.
Baking
  1. Pour the batter over the pineapple slices in the prepared pan, spreading it evenly.
  2. Bake in your preheated oven for 35-40 minutes or until a toothpick inserted comes out clean.
  3. Cool the cake for about 10 minutes in the pan before flipping it onto a serving plate.
  4. Serve warm or at room temperature.
