Ingredients
  

Pork Carnitas
  • 3 lbs pork shoulder cut into large chunks
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 1 onion onion quartered
  • 4 cloves garlic minced
  • 1 cup orange juice
  • 1 cup chicken broth
  • 2 tbsp lime juice
Taco Assembly
  • 8 small corn tortillas warmed
  • 1 cup cilantro chopped
  • 1 cup onion diced
  • 2 limes lime cut into wedges

Method
 

Prepare the Pork
  1. In a slow cooker, combine the pork shoulder, salt, black pepper, cumin, oregano, onion, garlic, orange juice, and chicken broth.
  2. Cover and cook on low for 6-8 hours or until the pork is tender and easily shreds.
Shred the Pork
  1. Once cooked, remove the pork from the slow cooker and shred it using two forks.
  2. Mix in lime juice and adjust seasoning if necessary.
Assemble the Tacos
  1. Place a generous amount of shredded pork onto each warmed tortilla.
  2. Top with chopped cilantro, diced onion, and a squeeze of lime.
  3. Serve immediately and enjoy!

Notes

For extra flavor, you can broil the shredded pork for a few minutes until crispy.
