Ingredients
  

Cookie Base
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup red food coloring
  • 1/4 cup blue food coloring
  • 1/2 cup powdered sugar for dusting

Method
 

Prepare the Dough
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the dough into two portions. Color one portion with red food coloring and the other with blue food coloring.
Shape and Bake
  1. Using a cookie scoop, take a small amount of red dough and a small amount of blue dough, and roll them together to form a ball.
  2. Roll the dough balls in powdered sugar until fully coated.
  3. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  4. Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers are still soft.
  5. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are best enjoyed fresh but can be stored in an airtight container for up to a week.
