Ingredients
  

For the Beans
  • 2 cups pinto beans rinsed and soaked overnight
  • 2 cloves garlic minced
  • 1 medium onion finely chopped
  • 1 teaspoon cumin optional
  • 4 cups vegetable broth or water use broth for extra flavor
For the Cooking
  • 2 tablespoons olive oil or lard for cooking
  • to taste salt season generously
  • to taste pepper freshly cracked

Method
 

Preparation
  1. Rinse your pinto beans thoroughly under cold water, removing any debris or stones.
  2. Soak the beans overnight in a large bowl with plenty of water.
  3. Cook the soaked beans in a pot of fresh water over medium heat for about 90 to 120 minutes until they are tender.
  4. Drain the beans, reserving some cooking liquid for later use.
Cooking
  1. Mash the cooked beans in a large skillet over medium heat, adding reserved liquid gradually until you reach your desired creaminess.
  2. Sauté diced onions and minced garlic in olive oil until fragrant and golden, about 3-4 minutes.
  3. Combine the sautéed mixture with the mashed beans, stirring to blend flavors together beautifully.
  4. Season with salt, pepper, and any additional spices you love, such as cumin or chili powder.

Notes

Optional: Top with fresh cilantro or a squeeze of lime for an extra burst of flavor.
