Ingredients
  

Vegetables
  • 2 cups Cucumbers, sliced Preferably pickling cucumbers
  • 1 cup Carrots, sliced Optional for added color
Brine
  • 1 cup White vinegar Can substitute with apple cider vinegar
  • 1 cup Water
  • 1 tablespoon Sugar Adjust to taste
  • 1 tablespoon Salt Kosher or sea salt preferred
  • 1 teaspoon Dill seeds Fresh dill can be used as well
  • 1 teaspoon Garlic powder Or 1-2 cloves of fresh garlic
  • 1 teaspoon Black peppercorns Optional for added spice

Method
 

Prepare the Vegetables
  1. Wash and slice the cucumbers and carrots. Place them in a mixing bowl.
Make the Brine
  1. In a separate bowl, whisk together the vinegar, water, sugar, salt, dill seeds, garlic powder, and black peppercorns until the sugar and salt are dissolved.
Combine and Refrigerate
  1. Pour the brine over the vegetables in the mixing bowl. Stir to combine.
  2. Transfer the mixture to a mason jar, seal tightly, and refrigerate for at least 24 hours before serving.

Notes

These pickles can last up to 2 weeks in the refrigerator. Feel free to experiment with different spices and vegetables.
