Ingredients
  

For the Rhubarb Topping
  • 2 cups rhubarb, chopped fresh or frozen
  • 1/2 cup sugar adjust to taste
  • 1 tablespoon water
  • 1 teaspoon vanilla extract
For the Cream Cheese Spread
  • 8 ounces cream cheese, softened
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon lemon juice
For the Toast
  • 4 slices bread your choice, such as sourdough or whole grain

Method
 

Prepare the Rhubarb Topping
  1. In a saucepan, combine the chopped rhubarb, sugar, water, and vanilla extract. Cook over medium heat until the rhubarb is soft and the mixture is syrupy, about 10 minutes.
Make the Cream Cheese Spread
  1. In a mixing bowl, combine the softened cream cheese, honey, and lemon juice. Mix until smooth and creamy.
Toast the Bread
  1. Toast the slices of bread in a toaster until golden brown.
Assemble the Toast
  1. Spread a generous layer of the cream cheese mixture on each slice of toasted bread. Top with the warm rhubarb mixture.

Notes

Feel free to add nuts or seeds for extra crunch, or serve with a sprinkle of cinnamon for added flavor.
