  • 2 medium yellow squash choose firm, vibrant squashes
  • 2 tablespoons olive oil for roasting
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly cracked
For the Topping
  • 1 cup Parmesan cheese freshly grated
  • 2 tablespoons fresh herbs like thyme or rosemary, finely chopped

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the yellow squash into even rounds, about ½ inch thick.
  3. Toss the squash slices in a large bowl with olive oil, salt, and pepper until well-coated.
  4. Arrange the seasoned squash on a baking sheet in a single layer.
  5. Sprinkle freshly grated Parmesan cheese and your choice of herbs over the top of the squash.
  6. Roast in the preheated oven for about 20-25 minutes, or until the squash is tender and slightly caramelized at the edges.
