Ingredients
  

For the Corned Beef
  • 1 piece corned beef brisket opt for a high-quality cut for the best flavor and tenderness.
  • enough to cover water ensuring it cooks evenly in the slow cooker.
  • 1 packet pickling spice this blend infuses your meat with that classic corned beef taste.
For the Vegetables
  • 2 large carrots peel and chop them into large pieces.
  • 4 medium potatoes use hearty potatoes like Yukon Gold.
  • 1 head cabbage cut into wedges.

Method
 

Preparation
  1. Rinse the corned beef under cold water to remove excess brine and pat it dry with paper towels.
  2. Rub the spice packet all over the meat for an even coating.
  3. Place carrots, potatoes, and onions in the bottom of the slow cooker.
  4. Position the seasoned corned beef on top of the vegetables.
  5. Add enough beef broth or water to cover about half of the beef.
  6. Cover the slow cooker and set it to low heat for 8-10 hours or high heat for 4-5 hours.
  7. Once cooked, remove the corned beef and let it rest for about 10 minutes before slicing against the grain.

Notes

Serve with a dollop of whole-grain mustard for an extra flavor kick!
