  • 4 links Sausages Choose your favorite variety, traditional Irish pork sausages work beautifully.
  • 4 slices Bacon Use thick-cut bacon for a smoky depth.
  • 2 medium Onions Sweet onions are ideal for caramelizing.
  • 4 medium Potatoes Yukon Gold or Russet potatoes provide a creamy texture.
For the Seasoning
  • 3 cloves Garlic Minced fresh garlic.
  • 1 teaspoon Thyme Dried thyme adds earthy notes.
  • 2 leaves Bay Leaves Contribute a subtle depth.
  • to taste Salt & Pepper Adjust to taste.

Method
 

Preparation
  1. Start by slicing the onions and sausages, and chopping the bacon into bite-sized pieces. Gather all necessary ingredients.
  2. In your slow cooker, place half of the sliced onions at the bottom.
  3. Layer in the chopped bacon and sausages over the onions.
  4. Sprinkle salt, pepper, and thyme over the meat layers.
  5. Layer in your sliced potatoes on top of the meats.
  6. Pour in enough beef or chicken broth to just cover all ingredients.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours.

Notes

Serve with fresh parsley sprinkled on top for a pop of color and flavor.
