Fried Chicken
- Marinate the chicken in buttermilk for at least 1 hour.
- In a bowl, mix flour, paprika, garlic powder, onion powder, salt, and pepper.
- Heat oil in a skillet over medium-high heat.
- Dredge the marinated chicken in the flour mixture and fry until golden brown and cooked through, about 15-20 minutes.
Collard Greens
- Heat olive oil in a large pot over medium heat.
- Add diced onion and garlic, sauté until translucent.
- Add collard greens, chicken broth, red pepper flakes, salt, and pepper.
- Simmer for about 45 minutes until greens are tender.
Cornbread
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, eggs, and melted butter.
- Combine wet and dry ingredients, mix until just combined.
- Pour into a greased baking dish and bake for 20-25 minutes.
Macaroni and Cheese
- Cook elbow macaroni according to package instructions.
- In a saucepan, melt butter over medium heat, stir in flour, and cook for 1 minute.
- Gradually whisk in milk, cooking until thickened.
- Stir in cheese until melted, then combine with cooked macaroni.
- Transfer to a baking dish and bake at 350°F (175°C) for 20 minutes.
