Ingredients
  

Salad Base
  • 4 cups Mixed Greens Romaine, spinach, arugula
  • 1 cup Cherry Tomatoes Halved
  • 1 cucumber Cucumber Sliced
  • 1/2 cup Red Onion Thinly sliced
Croutons
  • 4 slices Sourdough Bread Cut into cubes
  • 2 tablespoons Olive Oil For drizzling
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Dressing
  • 3 tablespoons Balsamic Vinegar
  • 1 tablespoon Dijon Mustard
  • 1/4 cup Olive Oil
  • 1 clove Garlic Minced
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Method
 

Prepare Croutons
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, toss the sourdough bread cubes with olive oil, garlic powder, oregano, salt, and pepper.
  3. Spread the croutons on a baking sheet in a single layer.
  4. Bake for 10-12 minutes or until golden brown and crispy, stirring halfway through.
Prepare Salad
  1. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  2. In a small bowl, whisk together balsamic vinegar, Dijon mustard, olive oil, minced garlic, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss to combine.
  4. Top the salad with the baked croutons just before serving.

Notes

For extra flavor, add grated Parmesan cheese on top before serving.
