Ingredients
  

Dough Ingredients
  • 2 cups all-purpose flour
  • 1 cup sourdough starter active and bubbly
  • 1/2 cup water adjust as needed
  • 1 teaspoon salt
  • 2 tablespoons olive oil

Method
 

Prepare the Dough
  1. In a mixing bowl, combine the flour and salt.
  2. Add the sourdough starter and olive oil, mixing until crumbly.
  3. Gradually add water until a soft dough forms.
  4. Knead the dough on a floured surface for about 5 minutes until smooth.
  5. Cover the dough with plastic wrap and let it rest for 30 minutes.
Cook the Tortillas
  1. Divide the dough into 8 equal pieces and roll each into a ball.
  2. Using a rolling pin, roll each ball into a thin circle about 8 inches in diameter.
  3. Heat a skillet over medium-high heat and cook each tortilla for about 1 minute on each side until lightly browned.
  4. Keep the cooked tortillas warm in a clean kitchen towel until ready to serve.

Notes

These tortillas are best served fresh but can be stored in an airtight container for a few days.
