Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
For the Green Icing
  • 2 cups powdered sugar
  • 2 tablespoons milk or cream adjust for thickness
  • a few drops green food coloring
Optional Toppings
  • sprinkles or edible glitter for decoration

Method
 

Baking the Cookies
  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients in a large bowl: combine flour, baking soda, and salt until well blended.
  3. Cream the butter and granulated sugar together in another bowl until light and fluffy, about 3-4 minutes.
  4. Add in the eggs and vanilla extract slowly, mixing until fully incorporated.
  5. Combine the dry and wet mixtures gradually, stirring until just combined.
  6. Chill the dough for about 30 minutes.
  7. Roll out the dough on a floured surface to about ¼ inch thickness and use a shamrock cookie cutter to create shapes.
  8. Bake the cookies for 10-12 minutes or until lightly golden around the edges.
  9. Cool the cookies on a wire rack for at least 10 minutes before icing.
Making the Icing
  1. Whisk powdered sugar and milk until smooth in a small bowl.
  2. Drizzle the glaze over each cooled cookie.
