Ingredients

For the Steak Marinade
  • 1 lb Flank Steak or Skirt Steak
  • 3 tbsp Olive Oil
  • 2 tbsp Lime Juice freshly squeezed
  • 2 cloves Garlic minced
  • 1 tbsp Chili Powder
  • 1 tbsp Cumin
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
For the Fajitas
  • 1 large Bell Pepper sliced, any color
  • 1 large Onion sliced
  • 8 small Flour Tortillas for serving
  • 1 cup Sour Cream for serving
  • 1 cup Guacamole for serving
  • 1 cup Pico de Gallo for serving

Method

Marinate the Steak
  1. In a mixing bowl, combine olive oil, lime juice, minced garlic, chili powder, cumin, paprika, salt, and black pepper. Mix well.
  2. Add the flank steak to the marinade, ensuring it is well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours.
Cook the Steak
  1. Preheat the grill to medium-high heat. Remove the steak from the marinade and discard the marinade.
  2. Grill the steak for about 5-7 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let it rest for 5 minutes.
Sauté the Vegetables
  1. In a skillet over medium heat, add a little olive oil and sauté the sliced bell pepper and onion until they are tender and slightly charred, about 5-7 minutes.
Assemble the Fajitas
  1. Slice the grilled steak against the grain into thin strips.
  2. Serve the steak with the sautéed vegetables on warm tortillas, along with sour cream, guacamole, and pico de gallo.

Notes

For extra flavor, you can add jalapeños to the sautéed vegetables or serve with additional toppings like shredded cheese or fresh cilantro.
