Ingredients
  

Steak and Filling
  • 1 lb flank steak thinly sliced
  • 1 cup bell pepper sliced
  • 1 cup onion sliced
  • 2 cups shredded cheese cheddar or Monterey Jack
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Quesadilla Assembly
  • 4 large flour tortillas

Method
 

Prepare the Steak
  1. Heat olive oil in a skillet over medium-high heat. Add sliced flank steak, cumin, chili powder, salt, and black pepper. Cook until steak is browned and cooked through, about 5-7 minutes.
Sauté Vegetables
  1. In the same skillet, add sliced bell pepper and onion. Sauté until softened, about 3-4 minutes.
Assemble Quesadillas
  1. On one half of each tortilla, layer cooked steak, sautéed vegetables, and shredded cheese. Fold the tortilla over to create a half-moon shape.
Cook Quesadillas
  1. Wipe the skillet clean and return to medium heat. Cook each quesadilla for 3-4 minutes on each side, or until golden brown and cheese is melted.
Serve
  1. Cut quesadillas into wedges and serve warm with salsa or sour cream.

Feel free to customize the filling with your favorite vegetables or add more spices for extra flavor.
